Where it all began
My love for baking started when I was young, watching my grandma roll out dough to make her special cookies. Those memories of her kitchen have always stayed with me.
My Journey in Sydney
In 2014, I moved to Sydney to study hospitality. Working in professional kitchens gave me a deep respect for the art of food, but it was during the pandemic that my personal spark for baking truly returned. I spent my days exploring new recipes and sharing them with my family and friends.
The Art of the Honey Cake
That's when I discovered the Honey Cake (Medovik), a traditional layered honey cake loved across Eastern Europe. I was amazed by how simple, hand-rolled honey biscuits layers, much like the cookies from my childhood, could be combined with cream to create such a delicate and an impressive masterpiece.
Fun fact: I actually baked my very first honey cake before I had ever even tried one from a store!
Why Honey Cakes?
I've always loved cakes that aren't overly sweet, but they were surprisingly hard to find in Sydney. I wanted to create something different - premium honey cakes made with natural ingredients and no unnecessary additives.
In 2025, Butterbee Baker was born from that idea: to share wholesome, comforting honey cakes with our community.
Butterbee Baker specialises in handcrafted honey cakes (Medovik) in Sydney, offering halal cakes made in small batches from our kitchen in North St Marys, Western Sydney.

A Milestone Moment
A truly special moment sharing my honey cake journey with pastry legend Darren Purchese. It was an incredible honour to have him try my creation and to receive his professional feedback. Meeting someone who has redefined the Australian dessert scene was a huge inspiration as I perfected my own recipe.

Butterbee Baker is a dedicated home-based kitchen in North St Marys. By focusing on small batches, I can give every single cake the personal care it deserves. Every cake is:
